- 1/3 cup pineapple juice
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp grated ginger
Instructions
- In a small bowl, whisk together all marinade ingredients.
- Place raw chicken (breasts, thighs, or drumsticks) in a large freezer-safe zip-top bag.
- Pour the marinade over the chicken. Seal the bag and gently move the chicken around to coat evenly.
- Remove as much air as possible from the bag before sealing completely.
- Lay the bag flat, label it, and freeze for up to 3 months.
- To cook: Thaw the chicken in the refrigerator overnight. Discard the marinade and grill the chicken over medium heat until fully cooked (165°F internal temperature).
Notes
- Great with grilled pineapple rings.
- This marinade is freezer-friendly and works great for meal prep. You can also use it with pork, shrimp, or grilled vegetables.
