Easy S’mores Cupcakes

I love all the recipes for S’mores Cupcakes, but with little ones who has the time for from scratch. This recipe is quick & easy with two types of frosting.  I used my favorite marshmallow fluff, delicious and looked great but did not hold up. Ingredients

  • 1 Box Cake Mix Duncan Hines Devil's Food
  • 1 cup Water
  • 1/3 cup Vegetable Oil
  • 3 Large Eggs
  • 9 whole Graham Cracker Crushed
  • 1 stick of Butter, melted
  • 1/2 cup of Flour
  • 1/4 cup Brown Sugar
  • 1 Jar of Marshmallow Fluff (or this perfect Marshmallow Frosting from Baking a Moment)

Instructions

  1. Preheat the oven to 350˚
  2. Prepare the Cake Mix according to the Box instructions.
  3. Mix the Water, Vegetable Oil eggs & Cake mix for 30 seconds on slow & 2 minutes on Medium.
  4. Crush the graham crackers in a plastic bag with a glass cup or rolling pin.
  5. Mix crushed cracker with the melted butter, flour & brown sugar.
  6. Line a cupcake pan with cupcake liners.
  7. Press about 2 tablespoons of graham cracker mixture in the bottom of each cup.
  8. Fill each cup 3/4 full of cake mix batter.
  9. Bake at 350˚ for 19 minutes.
  10. When cool frost with Marshmellow fluff and eat right away, or make the easy frosting if you are not going to eat right away.
