This cranberry jello salad mold is a raspberry jello salad with pineapple tidbits, cranberry sauce, celery, and pecans. It sets in a mold for at least 24 hours, so it is ready to slice and serve. Make it two days ahead for Thanksgiving or Christmas dinner.

  • Total Time: 25 hours
  • Yield: 8 servings 1x

Ingredients

Units Scale
  • 2 boxes (3 oz each) raspberry Jell-O, regular or sugar-free
  • 1 can (20 oz) pineapple tidbits in juice, drained, juice saved
  • Water to add to the pineapple juice to make 2 cups of liquid
  • 1 can (14 oz) whole berry cranberry sauce, or 14 oz homemade
  • 1/2 cup chopped celery
  • 1/2 cup chopped pecans

Instructions

  1. Pour the pineapple juice into a measuring cup and add water to make 2 cups of liquid.
  2. Pour the liquid into a saucepan and bring it to a boil. Stir in the Jell-O until it dissolves.
  3. Pour the hot jello into your mold and refrigerate for 25 to 30 minutes, checking every 15 minutes, until it just starts to set.
  4. Gently stir in the pineapple tidbits, cranberry sauce, celery, and pecans.
  5. Cover and refrigerate for at least 24 hours.
  6. Set the mold on your serving tray, then very gently loosen the middle part of the mold so it releases.

Notes

Use canned pineapple, not fresh. Fresh pineapple keeps jello from setting.

Homemade cranberry sauce: 1 package fresh cranberries, 1 cup water, and 1 cup sugar. Use 14 oz.

Make it on Tuesday to serve on Thursday.

I used a vintage Tupperware jello mold that holds 1.3 liters, about 5 1/2 cups.
