An easy slow cooker chicken pot pie with creamy filling, shredded chicken, and veggies, served over warm biscuits. It cooks on low while you work, so dinner is ready when you are. No pie crust needed, just a pan of warm Grands biscuits.

  • Total Time: 4 hours 10 minutes
  • Yield: 6 servings 1x

Ingredients

Units Scale
  • 3 boneless, skinless chicken breasts
  • 12 ounces frozen mixed vegetables (about 3 cups)
  • 1 can (10.5 ounces) cream of chicken soup
  • 2 cans (10.5 ounces each) cream of celery soup
  • 1 cup water or chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 tablespoon onion flakes
  • Black pepper, to taste
  • Salt, to taste after cooking
  • Grands biscuits, baked according to the package

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker and top with the frozen vegetables.
  2. Stir together the soups, water or broth, garlic powder, onion flakes, and black pepper. Pour over the chicken and vegetables.
  3. Cover and cook on low for 6 hours or on high for 4 hours.
  4. Take the chicken out, shred it with two forks or a chicken shredding tool, and stir it back into the sauce.
  5. Taste and add salt if needed.
  6. Bake the biscuits according to the package directions.
  7. Spoon the filling over split warm biscuits and serve.

Notes

  1. Thaw the chicken before cooking.
  2. Chicken should reach 165 degrees F inside.
  3. Check the chicken at 6 hours, since every crockpot runs a little different.
  4. Store leftovers in the fridge for 3 to 4 days.
  5. Leftover filling freezes well for up to 3 months.
