Crockpot stuffed peppers with tomato soup are an easy fall dinner. Beef, rice, and green peppers cook low in the slow cooker for 6 hours with about 20 minutes of prep.

  • Total Time: 6 hours 20 minutes
  • Yield: 8 servings 1x

Ingredients

Units Scale
  • 8 large green bell peppers
  • 1.5 pounds 90/10 ground beef
  • 1 cup uncooked rice
  • 3 tablespoons dried onion flakes
  • 1 teaspoon garlic powder
  • 4 cans Campbell's condensed tomato soup (10.75 ounces each)
  • About 1.5 cups water
  • Cooking spray or butter, to grease the crockpot

Instructions

  1. Wash the green peppers, cut off the tops, and clean out the seeds.
  2. In a large bowl, combine the ground beef, uncooked rice, onion flakes, and garlic powder. Mix well, but do not overmix.
  3. Grease the inner pot of a 6 quart crockpot. Add the tomato soup and water, and mix well.
  4. Stuff each pepper with the meat and rice mixture. Stand the peppers in the soup in a single layer.
  5. Cover and cook on low for 6 hours, until the beef reaches 160°F.
  6. Spoon some of the sauce over each pepper and serve hot.

Notes

1. For a 6 quart crockpot, use about 8 peppers in a single layer.

2. Do not overmix the filling.

3. Ground beef is safe at an internal temperature of 160°F.

4. Leftovers can be frozen in an airtight container with some of the sauce.
