Easy Crunchy Asian Ramen Salad with Coleslaw for a Crowd

  • 1 & 1/2 (16 oz) bags of coleslaw mix of any kind

For the Ramen Topping:

  • 3 packages of beef Ramen noodles (or any flavor)
  • 12 Seasoning packets (depending on the sodium level you want in the recipe for your family)
  • 1/2 cup of melted butter
  • 1 & 1/2 cups of almonds slivers or slices

For the Dressing:

  • 1/2 cup of light olive oil
  • 1 tablespoon of Worcestershire sauce
  • 1/4 cup of white vinegar
  • 1/4 cup of sugar

Instructions

  1. Preheat your oven to 350° F (175° C).
  2. In a large mixing bowl, combine the contents of 3 packages of beef Ramen noodles with 1/2 cup of melted butter and one package of seasoning from the Ramen noodles. Toss until the noodles are evenly coated. 
  3. Spread the mixture on a baking sheet and bake in the preheated oven for 10 minutes. Keep a close eye on it to prevent burning. Once done, remove from the oven and let cool.
  4. In a separate large mixing bowl, add the bags of coleslaw.
  5. In a small mixing bowl, whisk together 1/4 cup of light olive oil, one tablespoon of Worcestershire sauce, 1/4 cup of white vinegar, and 1/4 cup of sugar to make the dressing.
  6. Pour the dressing over the coleslaw and toss until well coated.
  7. Just before serving, sprinkle the cooled Ramen topping over the coleslaw and gently toss to distribute. Reserve 1/4 cup of the Ramen topping as garnish.
