Description
Easy Chili Cornbread Skillet Casserole Bake is a family-favorite dinner in our house. The recipe combines the rich flavors of chili with a comforting golden cornbread top, all perfectly combined in a single skillet.
Ingredients

- 1 tablespoon Olive oil
- 1 medium Onion chopped
- 1 Green or Red Pepper chopped
- 2 Garlic Cloves chopped
- 1 pound Ground Beef
- 1/2 teaspoon Chili Powder
- 1/2 teaspoon Cumin
- 1 can Kidney Beans (can substitute chili beans or cannellini beans)
- 1/2 cup of fresh or frozen Corn
- 1 can of Tomato Sauce 15 oz
For the Cornbread Topping:
- 1 box of Krusteaz Honey Cornbread
- 1 egg
- 2/3 cup of Milk or fat free 1/2 and 1/2
- 1/3 cup of light olive oil
Instructions
- Preheat oven to 375° F or 190° C
- Over medium heat in the cast iron skillet add 1 tablespoon of olive oil and saute one medium onion for about 3 minutes.
- Add the garlic and cook 1 more minute.
- Add the lean ground beef and cook until cooked through.
- Add the chili powder and cumin and stir.
- Add the kidney beans, and tomato sauce. Cook another 2 minutes. Turn off the stove top.
- While the ground beef mixture is cooking prepare the cornbread mixture.
- Mix together the cornbread mix, the egg, milk or half and half and light olive oil and mix. (You can use your family or favorite homemade cornbread instead of the prepared cornbread mix)
- Gently spoon the cornbread batter on top of the chili in the cast iron skillet. Gently spread to the edge of the skillet.
- Place the cast iron skillet on a cookie sheet and cook in the 375° oven for 25 to 35 minutes or until the cornbread is golden brown and a toothpick comes out dry.
- Serve with your favorite chili toppings or tortilla chips.
Notes
- This recipe also make a delicious casserole. Just make the ground beef mixture in a large skillet and transfer to a casserole dish. Make your cornbread mixture and layer on top and bake as above.
