Easy 6-Ingredient Crockpot Broccoli Rice Casserole

This Crockpot broccoli rice casserole is a delicious comfort food to serve with your main dish for your holiday dinner. An easy slow cooker recipe the best thing is the extra cheese topping.

Ingredients

  • 2 cups uncooked white rice
  • 2 cups frozen or fresh broccoli florets
  • 2 can (10.5 ounces) Campbell’s Cream of Celery Soup
  • 2 cups shredded cheddar cheese
  • 3 cups chicken broth, 2 cups to blanch the broccoli, and 1 cup when you are mixing the rice and the soup. (or vegetable broth for a vegetarian version)
  • 1/2 teaspoon garlic powder
  • Cooking spray or butter for greasing the slow cooker

Instructions

  1. Spray the inside of your crockpot with cooking spray to prevent sticking.
  2. In a large saute pan, add 2 cups of chicken broth and the frozen broccoli and cook for 5 minutes to get the broccoli defrosted and the broth hot. 
  3. Add to the Crockpot or I used my Ninja Possible Cooker Pro the 2 cups of uncooked rice, 1 cup of chicken broth (this would be the 3rd cup of rice at this time), 2 cans of cream of celery soup, and 1/ teaspoon of garlic powder. 
  4. Mix well and then add the 2 cups of cheddar cheese and stir until the mixture is smooth. 
  5. Cover the crockpot with its lid and cook on high for 1 hour.  After 1 hour stir and see if the rice is cooked. Depending on how hot your Crockpot gets it may take anywhere from 1 hour and 1.5 hours until the rice is cooked. 
  6. When the casserole is done sprinkle with extra cheddar cheese.

Notes

  1. I updated this recipe on April 16, 2024, when I saw the high price of Ritz Crackers and fresh broccoli. I wanted to make this recipe as budget-friendly as possible so the only topping is additional cheddar cheese and used frozen broccoli from Costo. 
  2.  This recipe worked best for me in the Ninja Everyday Possible Cooker Pro 6.5 QT
