Description
This Crockpot broccoli rice casserole is a delicious comfort food to serve with your main dish for your holiday dinner. An easy slow cooker recipe that the best thing is the extra cheese and the Ritz cracker topping.

- 1 cup uncooked white rice
- 2 cups fresh broccoli florets
- 1 can (10.5 ounces) Campbell’s Cream of Celery Soup
- 2 cups shredded cheddar cheese
- 1 sleeve of Ritz crackers (about 35 crackers), crushed
- 2 cups chicken broth (or vegetable broth for a vegetarian version)
- 1/2 teaspoon salt
- Cooking spray or butter for greasing the slow cooker
Instructions
- Spray the inside of your crockpot with cooking spray to prevent sticking.
- In a large mixing bowl, combine the uncooked rice, fresh broccoli florets, and shredded cheddar cheese.
- Add the chicken broth. Stir everything together until all the ingredients are evenly coated.
- Transfer the mixture into the greased crockpot and spread it out evenly.
- In a separate bowl, crush the Ritz crackers until you have fine crumbs.
- Sprinkle the crushed Ritz crackers evenly over the top of the casserole.
- Cover the crockpot with its lid and cook on low heat for 2-3 hours or until the rice is cooked, the broccoli is tender, and the casserole is hot and bubbly.
- When the casserole is done sprinkle with extra cheddar cheese.
