- 2 cups uncooked white rice
- 2 cups frozen or fresh broccoli florets
- 2 can (10.5 ounces) Campbell's Cream of Celery Soup
- 2 cups shredded cheddar cheese
- 3 cups chicken broth, 2 cups to blanch the broccoli, and 1 cup when you are mixing the rice and the soup. (or vegetable broth for a vegetarian version)
- 1/2 teaspoon garlic powder
- Cooking spray or butter for greasing the slow cooker
Instructions
- Spray the inside of your crockpot with cooking spray to prevent sticking.
- In a large saute pan, add 2 cups of chicken broth and the frozen broccoli and cook for 5 minutes to get the broccoli defrosted and the broth hot.
- Add to the Crockpot or I used my Ninja Possible Cooker Pro the 2 cups of uncooked rice, 1 cup of chicken broth (this would be the 3rd cup of rice at this time), 2 cans of cream of celery soup, and 1/ teaspoon of garlic powder.
- Mix well and then add the 2 cups of cheddar cheese and stir until the mixture is smooth.
- Cover and cook on high for 1 to 1.5 hours if using a fast-heating multicooker, or 2.5 to 3.5 hours on high (4 to 5 hours on low) if using a standard crockpot, until the rice is tender and the liquid is absorbed.
- When the casserole is done, sprinkle with extra cheddar cheese.
Notes
- Cook time depends heavily on your appliance. A standard crockpot needs meaningfully more time than a Ninja Possible Cooker Pro or similar fast-heating multicooker.
- This recipe uses regular white rice, not instant rice. Do not swap in instant rice without shortening the cook time.
- Leftovers keep in the fridge for up to 4 days. This casserole does not freeze well, the rice gets grainy once thawed.
- Use vegetable broth in place of chicken broth to keep this recipe vegetarian.
- This recipe worked best for me in the Ninja Everyday Possible Cooker Pro 6.5 QT
