Easy Ham Salad Recipe For Easter Leftovers

A classic easy ham salad recipe using leftover ham from your family holiday dinner. 

Ingredients

  • 6 thick slices of cooked ham ground (not cold cuts). Use enough ham to make 2 cups of ground ham.
  • 1 cup of light mayonnaise
  • 1 tablespoon finely chopped onion
  • 1 stock of finely chopped celery
  • 2 tablespoons sweet pickle relish drained
  • Pepper to taste (no need for salt as the ham is salty)
  • White or whole sweet bread or croissant
  • 1 can of large green olives with pimentos or finely chopped green onion for garnish.

Instructions

  1. Using a KitchenAid mixer attachment for grinding (or a hand grinder or food processer), make sure that the ham is cold, grind to make at least 2 cups of ground ham. 
  2. Mix the ham with the mayonnaise, chopped onion, chopped celery, and pickle relish until smooth. 
  3. Add pepper to taste and garnish with green onion or sliced olives. 
  4. Serve as a sandwich or open face on bread or crackers.
