Easy Ham Salad Recipe For Easter Leftovers
A classic easy ham salad recipe using leftover ham from your family holiday dinner.

- 6 thick slices of cooked ham ground (not cold cuts). Use enough ham to make 2 cups of ground ham.
- 1 cup of light mayonnaise
- 1 tablespoon finely chopped onion
- 1 stock of finely chopped celery
- 2 tablespoons sweet pickle relish drained
- Pepper to taste (no need for salt as the ham is salty)
- White or whole sweet bread or croissant
- 1 can of large green olives with pimentos or finely chopped green onion for garnish.
- Using a KitchenAid mixer attachment for grinding (or a hand grinder or food processer), make sure that the ham is cold, grind to make at least 2 cups of ground ham.
- Mix the ham with the mayonnaise, chopped onion, chopped celery, and pickle relish until smooth.
- Add pepper to taste and garnish with green onion or sliced olives.
- Serve as a sandwich or open face on bread or crackers.
