Instant Pot Red Beans and Rice Recipe

Units Scale
  • 1 Onion chopped
  • 1 Garlic clove mashed
  • 2 cans beef broth
  • 1/2 cup Water
  • 2 cups Uncooked Rice
  • 1 tsp Thyme
  • 1 tsp Salt
  • pepper to taste
  • 1 TLB Olive Oil
  • 1 Green Pepper chopped
  • 1 Red Pepper chopped
  • 2 cans Red Kidney Beans drained & washed
  • 1 lb (1package) Turkey Sausage
  • Any other vegetable you would like to add


  1. Chop the onions, mash the garlic and saute’ in 1 TLB of olive oil (or vegetable oil) in the bottom of the pressure cooker.
  2. Add salt, pepper, thyme cook for 2 minutes.
  3. Add the peppers, rice, sausage, broth and water to the cooker.
  4. Add the kidney beans and secure the lid.
  5. Let the valve to close and set the timer for 6 minutes.
  6. When the cooking timer is done, fast release the pressure so the rice does not overcook.
