- 2 tablespoons of olive oil
- 1 large onion, chopped
- 2 green or red bell peppers, chopped
- 3 garlic cloves, chopped
- 1 package of turkey sausage, sweet or hot, cut into chunks
- 2 cans of small diced tomatoes, 28 oz (large can)
- 1 cup of water optional
- 1 can of 100% pumpkin, 15 oz can
- 1 tablespoon of chili powder
- 1 teaspoon of cumin
- salt and pepper to taste
- 2 cans of red kidney beans, drained and rinsed.
Instructions
- In a large Dutch oven, heat the olive oil.
- Add the onion and a pinch of salt and cook for 2 minutes.
- Add the green or red peppers and saute for 2 minutes
- Add the garlic and cook until the peppers are soft.
- Add the bite-size pieces of turkey sausage and cook until no longer pink.
- Add the tomatoes, and water if you want a thinner chili.
- Add all of the spices, and stir.
- Add the pumpkin and the kidney beans and stir well.
- Bring to a boil.
- Reduce the heat to medium or low and simmer for 30 minutes.
- Serve with bread and/or a little sour cream on top.
