The best Pumpkin Chili with turkey sausage

Your family will love delicious pumpkin chili with turkey sausage. You will love all the vegetable goodness packed in the pumpkin and the kidney beans. Simple to put together, and quick to cook you will have dinner on the table in no time.

Ingredients

  • 2 tablespoons of olive oil
  • 1 large onion, chopped
  • 2 green or red bell peppers, chopped
  • 3 garlic cloves, chopped
  • 1 package of turkey sausage, sweet or hot, cut into chunks
  • 2 can of small diced tomatoes, 28 oz (large can)
  • 1 cup of water optional
  • 1 can of 100% pumpkin, 15 oz can
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • salt and pepper to taste
  • 2 cans of red kidney beans, drained and rinse.

Instructions

  1. In a large dutch oven, heat the olive oil.
  2. Add the onion and a pinch of salt and cook for 2 minutes.
  3. Add the green or red peppers and saute for 2 minutes
  4. Add the garlic and cook until the peppers are soft.
  5. Add the bite size pieces of turkey sausage and cook until no longer pink.
  6. Add the tomatoes, and water if you want a thinner chili.
  7. Add all of the spices, stir.
  8. Add the pumpkin and the kidney beans and stir well.
  9. Bring to a boil.
  10. Reduce the heat to medium or low and simmer for 30 minutes.
  11. Serve with bread and/or a little sour cream on top.
