- 4 tablespoons chia seeds
- 1 cup unsweetened almond milk
- 1 cup fresh strawberries, chopped
- 1 tablespoon monk fruit sweetener (adjust to taste)
- 1/2 teaspoon vanilla extract
- Sliced strawberries for garnish (optional)
Instructions
- In a blender or food processor, blend the fresh strawberries until smooth.
- In a bowl, combine the chia seeds, unsweetened almond milk, blended strawberries, monk fruit sweetener, and vanilla extract. Stir well to combine.
- Let the mixture sit for about 15 minutes to allow the chia seeds to absorb some of the liquid.
- Stir the chia seed mixture again to break up any clumps and ensure they are evenly distributed. You may want to stir a few times to make sure the chia seeds are mixed well.
- Transfer the thickened pudding to dessert cups or small mason jars. Cover.
- Refrigerate the chia seed pudding for at least 2 hours or overnight to allow it to thicken and set.
- Optional: Garnish with sliced strawberries for an extra touch of freshness.
