Do you need to make lunch with just what is in the kitchen? Try a quick delicious sweet and tangy tuna salad for a sandwich or salad with just what you have in your fridge and pantry. A basic tuna salad for a lunch sandwich or with lettuce can be made with extras that you have in your refrigerator.

Ingredients

  • 2 cans of tuna in water
  • 4 sweet pickles relish (or fresh chopped dill pickles)
  • 3 olives, chopped
  • 2 tablespoons of corn relish
  • 1/4 teaspoon of onion flakes or onion powder (or fresh chopped red onion)
  • 1 cup Mayonaise
  • 1/4 cup of plain Greek yogurt
  • salt and pepper

Instructions

  1. Open 2 cans of tuna and drain off the water (if you have tuna in oil that works too, just drain off the oil)
  2. Put the tuna in a medium bowl and break up with a fork
  3. Add the pickle relish, the chopped olives, the corn relish, and onion powder.
  4. Next, in a small bowl mix together the mayonnaise and the plain yogurt.
  5. Add the mayonnaise/yogurt to the tuna, mix, and salt and pepper to taste.
  6. If you want to make a sandwich, you can use plain bread or toast. Add some lettuce to your sandwich to add some more veggies.
