Description

Knorr Vegetable Recipe Mix: Cold Creamy Spinach dip perfect for dipping bread or veggies


Ingredients

Units Scale
  • 1 large pumpernickel round bread loaf
  • 1 Package of Knorr Vegetable Recipe mix packet
  • 10 oz of frozen spinach, thawed and squeezed dry
  • 16 oz of sour cream
  • 1 cup mayonnaise (can use 1/2 sour cream & 1/2 low-fat plain Greek yogurt)
  • 1 8 oz can of sliced water chestnuts, chopped small
  • 3 long green onions, chopped
  • Optional second loaf of bread for dipping
  • Raw vegetables chopped for dipping
  • optional crackers


Instructions

  1. Defrost the spinach.
  2. Line a colander with several layers of paper towel.  Put the spinach in the paper towels and over the colander squeeze all the water out until the spinach is very, very, dry.
  3. Mix the Vegetable Packet, spinach, sour cream mayonnaise, and the water chestnuts together until smooth and creamy.
  4. Chill in the refrigerator for at least an hour.
  5. Cut out the middle of the loaf of bread, making a hole in the middle to put the dip in.
  6. Cut the middle that you removed into bite-size pieces.
  7. Right before you are ready to serve, put the Spinach Dip in the middle of the bread bowl, and top with the chopped green onion.

Notes

Alternatives:

  1. Serve the dip in a Sour Dough Round Bread Bowl
  2. Serve in a regular bowl (not as dramatic)
  3. Serve with cucumbers, carrots, red & green peppers, broccoli, cauliflower
  4. Serve with crackers
  5. This dip if not eaten with the bread or crackers is a great snack for a low carb or Keto diet.
