These easy mint chocolate chip cookies are made with a sugar cookie mix, making them a quick and delicious treat that’s perfect for any occasion. The refreshing mint flavor pairs perfectly with the rich chocolate chips.

Ingredients

    • 1 package of sugar cookie mix
    • 1 egg
    • 1 stick of melted butter (or vegetable oil)
    • 1 teaspoon of mint extract
    • 1 cup of semisweet chocolate chips
    • Green food coloring (optional)

Instructions

    1. Preheat your oven to 350°F (180°C).
    2. In a large mixing bowl, combine the sugar cookie mix, egg, and melted butter (or vegetable oil) according to the package instructions.
    3. Stir in the mint extract and a few drops of green food coloring, if using. The food coloring will give your cookies a more authentic minty green color, but it’s optional.
    4. Stir in the chocolate chips.
    5. Drop rounded tablespoon-sized balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
    6. Bake the cookies for 8-10 minutes, or until they are lightly golden around the edges.
    7. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
