This pumpkin chia seed pudding with Greek yogurt tastes like pumpkin pie and has no added sugar. Stir it together in 10 minutes and let it chill for an easy fall breakfast or snack.

Ingredients

  • 1 cup plain, unsweetened Greek yogurt
  • 1/2 cup canned pure pumpkin
  • 1/2 cup Fairlife milk
  • 1/4 cup chia seeds
  • 2 tablespoons monk fruit sweetener (the 1:1 kind)
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon vanilla bean paste

Instructions

  1. In a medium bowl, whisk the Greek yogurt, pumpkin, Fairlife milk, monk fruit, pumpkin pie spice, cinnamon, and vanilla bean paste until smooth.
  2. Add the chia seeds and whisk again until they are mixed in.
  3. Let it sit for 5 to 10 minutes, then give it another good stir to break up any clumps.
  4. Spoon it into 2 jars or cover the bowl. Chill for at least 3 hours, or overnight.
  5. Serve plain or with your favorite toppings.

Notes

1. Shown with whipped cream and a drizzle of sugar-free caramel. 

2. Use canned pure pumpkin, not pumpkin pie filling, which has added sugar.

3. If the pudding is too thick after chilling, stir in a splash of milk.

4. Keep covered in the fridge for up to 5 days. Add toppings just before eating.
