Impossible™ Meat Vegetarian Chili

Impossible meat vegetarian chili is a quick and easy fall dinner recipe. Nothing tastes so good as a warm comforting homemade chili. Using the Impossible meat makes the chili recipe healthy if you are eating plant based or just reducing red meat in your family’s diet. 

Ingredients

  • 1 large onion cubed
  • 1 tablespoon of olive oil
  • 3 green peppers cubed
  • 1 package of Impossible™ Burger Meat
  • 2 cans kidney beans (15.5 oz) drained and rinsed (reserve 1/4 cup of the can of beans liquid if needed)
  • 1 teaspoon of cumin
  • 1 to 2 teaspoons of chili powder
  • 1 teaspoon of garlic powder
  • 1/4 teaspoon black cumin (optional)
  • 1 can Rotel tomatoes with chilis (10 oz)
  • 3 large cans of Die Fratelli Diced Tomatoes (28 oz) in Hearty Sauce ( or any large cans of diced tomatoes)
  • toppings: Cheese, Sour Cream, Green onion, jalapeno.

Instructions

  1. Chop the onions and green peppers, the recipe is best if you cube them to bit sized.
  2. In a large dutch oven or large cooking pot, add the olive oil and heat. Add the onion and cook for 5 minutes. Next, add the green onions and cook for 8 minutes until the onion and peppers a cooked.
  3. Add the Impossible™ Meat and cook until brown.  Stir while the plant based meat cooks. If the Impossible™ meat starts to stick add a little of the reserved liquid from the kidneys beans.
  4. After the plant based meat is cooked add tomatoes, tomatoes with chilies, kidney beans, and all the spices.
  5. Cover and cook on medium until boiling and then simmer for 15 minutes.  Remove the lid and cook until the chili is the thickness you like.
  6. Serve with lots of toppings.
