Simple Cast Iron Skillet Meatloaf

Easy cast iron skillet meatloaf with a crispy golden crust and a juicy, tender center. A simple old fashioned recipe ready in 1 hour.

Ingredients

  • 1 lb 90/10 ground beef
  • 1 egg
  • 1/2 cup Panko bread crumbs
  • 1 tablespoon dried onion flakes
  • 1 tablespoon dried basil
  • 1/2 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons ketchup

Instructions

1. Preheat oven to 350°F. Place cast iron skillet in oven while preheating.

2. Combine all ingredients except ketchup in a large bowl. Mix with hands just until combined. Do not overmix.

3. Shape into an oval loaf and place in the preheated cast iron skillet.

4. Spread ketchup evenly over the top.

5. Bake at 350°F for 1 hour or until internal temperature reaches 160°F.

6. Rest 5 to 10 minutes before slicing. Serve hot.

Notes

  1. Do not overmix the meat or the meatloaf will be dense. Always use a meat thermometer. Internal temp must reach 160°F.
