A dump, stir, and go crockpot dinner with baby potatoes, smoked sausage, and green beans in a buttery Cajun onion sauce. It cooks while you get on with your day.

  • Total Time: 6 hours 15 minutes
  • Yield: 8 servings 1x

Ingredients

Units Scale
  • Olive oil spray, for the pot and the potatoes
  • 1 1/2 pounds baby potatoes, washed and cut in half
  • 1 large onion, roughly chopped
  • 1 teaspoon sea salt (optional)
  • 1 teaspoon Cajun seasoning
  • 1 packet Lipton onion soup mix
  • 1/2 teaspoon garlic powder
  • 14 ounces frozen green beans
  • 12 ounces Johnsonville smoked sausage, beef or turkey, sliced into half-inch discs
  • 1/2 cup butter, cut into pieces

Instructions

  1. Spray the inside of your 6 quart slow cooker with olive oil spray.
  2. Wash the baby potatoes and cut them in half. Put them in the bottom of the pot, then spritz them with olive oil spray.
  3. Add the chopped onion on top of the potatoes. Sprinkle on the sea salt (if using), Cajun seasoning, onion soup mix, and garlic powder, then toss it all together.
  4. Pour the frozen green beans over the top. Add the sausage slices in a layer on top of the beans.
  5. Place the pieces of butter over everything.
  6. Cover and cook on high for 2 hours, then on low for 4 hours, until the potatoes are tender.
  7. Give everything a good stir so the buttery sauce coats the potatoes. Serve hot.

Notes

1. Cut any bigger potatoes a little smaller so everything cooks at the same pace.

2. No rush on dinner? Cook it on low for about 6 hours instead.

3. The frozen green beans go in straight from the bag, no thawing needed.

4. To cut the salt, leave out the sea salt, because the Cajun seasoning, soup mix, and sausage already have salt in them.
