Swamp Potatoes Crockpot Recipe with Sausage
This swamp potatoes crockpot recipe is a dump, stir, and go dinner made with baby potatoes, smoked sausage, and green beans. It cooks while you get on with your day, and the whole family will love it.
The onion soup mix, Cajun seasoning, and butter make their own sauce right in the pot. The sausage is already fully cooked, so you do not have to cook anything first.
Prep time is 15 minutes, and it makes 8 servings in a 6 quart slow cooker.
How Swamp Potatoes Became Our Yard Work Dinner
I saw this recipe go viral on YouTube, and I knew I had to try it. I am always looking for a quick crockpot meal that is hearty and easy.
I knew Jim would love this one because he really likes potatoes and green beans. Having it all together in one dish with the sausage was a taste I knew he would love, so we tried it out.
Now it is one of our normal monthly crockpot dishes. We make it on yard work days, so dinner is ready when we come inside. By then we are tired and do not want to cook.
This recipe was inspired by the viral version from Allrecipes, and I made it my own with smoked sausage.
Why You’ll Love This Swamp Potatoes Crockpot Recipe
- It takes about 15 minutes to prep, then the slow cooker does the work.
- You do not have to cook the sausage first, because it is already fully cooked.
- One 6 quart slow cooker feeds 8 people.
- Dinner is ready when you finish the yard work or a busy day.
- It is easy to cut the salt if you need to.

Ingredients You’ll Need
These are listed in the order I layer them.
- Olive oil spray, for the pot and the potatoes
- 1 1/2 pounds baby potatoes, washed and cut in half
- 1 large onion, roughly chopped
- 1 teaspoon sea salt (optional)
- 1 teaspoon Cajun seasoning
- 1 packet Lipton onion soup mix
- 1/2 teaspoon garlic powder
- 14 ounces frozen green beans
- 12 ounces Johnsonville smoked sausage, beef or turkey, sliced into half-inch discs
- 1/2 cup butter, cut into pieces
Tips and Tricks
- Cutting down on salt:Β The salt was just right for us. If you are watching your salt, leave out the sea salt, because the Cajun seasoning, soup mix, and sausage already have salt in them.
- Sausage:Β The recipe uses one 12 ounce package. If your family loves sausage, use two packages. I plan to do that next time.
- Beef or turkey:Β Either Johnsonville smoked sausage works. I used turkey.
- Frozen green beans:Β Put them in straight from the bag. No thawing needed.
- Cook time:Β I started mine on high for 2 hours, then switched to low for 4 hours, because I did not want to eat late. If you have the time, you can cook it on low for about 6 hours.

- Top with Green Beans and Sausage:Β Pour the frozen green beans over the top. Add the sausage slices in a layer on top of the beans.
