Unstuffed Ground Beef Cabbage Roll Casserole One-Pan

Your whole family will love this easy recipe and you will love the simple ingredients for a busy weeknight dinner.

Ingredients

Units Scale
  • 2 small Onions diced
  • 1 tablespoon Olive Oil
  • 1 teaspoon minced Garlic (or 1 teaspoon garlic powder)
  • 1 Green Bell Pepper (can use red or yellow)
  • 1 pound of Lean Ground Beef (I use Butcher Box Ground Beef)
  • 1/2 Onion Powder
  • 1/2 teaspoon Oregano
  • 1/2 teaspoon of smoked or sweet Paprika
  • 1 can Diced Tomatoes (14 oz can)
  • Salt and Pepper to taste (I do not add any salt when cooking just the pepper for heart health)
  • 1/2 a large head of cabbage
  • 1 to 2 cups of Shredded Cheddar Cheese (can use Monterey jack cheese)

Instructions

  1. Dice the onions and bell pepper and mince the garlic. Cut the cabbage in half, remove the outer leaves and the hard center core, then chop half the head into bite-sized pieces. Getting all your prep done before you turn on the heat makes this recipe move really fast.
  2. Heat a large deep-sided skillet or Dutch oven over medium-high heat. Add 1 tablespoon of olive oil, then the onions and garlic. Once the onions begin to soften, add the diced bell pepper. Cook until everything is soft and fragrant, about 5 minutes. Remove from the pan and set aside.
  3. Add the remaining tablespoon of olive oil to the pan. Add the ground beef and break it into small pieces as it cooks. Brown all the way through, about 6 to 8 minutes. Drain any excess fat if needed.
  4. Add the onion powder, oregano, paprika, diced tomatoes with their liquid, salt, and pepper to the beef. Stir in the sauteed onion, garlic, and pepper mixture and mix everything well. Do not drain the tomatoes as that liquid helps steam the cabbage.
  5. Add the chopped cabbage on top, cover the pan, and cook on medium heat for 10 minutes. After 10 minutes, stir everything together and cook uncovered for another 15 minutes until the cabbage is wilted and tender. The cabbage looks like too much at first but it cooks down significantly, so just pile it in!
  6. Sprinkle the shredded cheddar over the top. Cover the pan for 1 to 2 minutes to let the cheese melt. Serve warm straight from the pan.
