  • 2 small onions, diced
  • 2 tablespoons olive oil, divided

  • 1 green bell pepper, diced (red or yellow work too)
  • 1 pound lean ground beef I use Butcher Box Ground Beef
  • 1/2 teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon smoked or sweet paprika
  • 1 can (14 oz) diced tomatoes, with liquid
  • Salt and pepper to taste  I skip the salt and just use pepper for heart health
  • A large head of green cabbage, chopped into bite-sized pieces
  • 1 to 2 cups shredded cheddar cheese (Monterey Jack works great too)
