When I was growing up in the sixties this homemade beef stroganoff recipe was popular. I remember my mom standing over the stove making this recipe at dinner time. Now you can have that same classic beef stroganoff recipe taste without having to spend the evening hours over the stove.
This easy beef stroganoff recipe is so delicious. It’s amazing how it turns basic ingredients into such a comforting, mouth-watering dish. The key is the tender chunks of beef that just melts in your mouth, and the recipe is so easy, that it’s perfect for any home cook.

CrockPot Beef Stroganoff Equipment Needed

CrockPot Beef Stroganoff Ingredients
- 1 tablespoon olive oil
- 1 large onion chopped
- 2 cloves of garlic chopped
- 2 pounds of beef tips
- 1 can of cream of mushroom soup
- 1/2 cup water
- 3 cans of sliced mushrooms or 3 cups of fresh mushrooms
- Salt and Pepper
- 1/2 cup of cream cheese
- 1/2 sour cream
- 1 package of egg noodles

How to Make CrockPot Classic Beef Stroganoff with Beef Tips
- In a large skillet over medium-high heat add the olive oil and saute 1 large onion and 2 cloves of garlic for 3 minutes.
- Add the beef tips and brown on all sides.
- Add the onions, garlic, and beef tips to the CrockPot.
- Stir into the crock pot the one can of cream of mushroom soup and 1/2 cup of water.
- Salt and Pepper to taste.
- Set the CrockPot on low for 5 hours.
- When the recipe is cooked add a little of the sauce of the recipe to the cream cheese to warm it up. Use a whisk and add more sauce to still the cream cheese, add the cream cheese to the CrockPot and stir.
- Next, warm up the sour cream in the same way add it to the recipe, and stir.
- Keep the recipe warm and boil the egg noodles per the instructions on the package.

How to Store leftover Beef Stroganoff
If you have any leftover beef stroganoff or are like me and try to make more than you need for one night, simply store it in an airtight container in the fridge.
I have not tried to freeze this recipe as sometimes with a cream base it does not thaw we.. but as this is a family favorite everyone will want it for lunch the next day and freezing will not be needed.

Tips and Variations for CrockPot Classic Beef Stroganoff
- Traditional beef stroganoff uses tender strips of beef however you will love the extra flavor that beef tips provide.
- This recipe can be made with top sirloin tips or thin strips, beef stew meat, or any tender chunks of beef.
- When making the recipe for the first time, and if the sauce is too thin you can make a cornstarch slurry of 1 tablespoon cornstarch and 2 tablespoons of cold water.
- Add a 1/2 cup of red wine for a deep flavor.
- For a little tang, you can add 1 tablespoon of Dijon mustard.
- Try adding a tablespoon of soy sauce or Worcestershire sauce.
- Garnish the top with fresh parsley.
- Serve with a little sour cream for garnish.
- If you are a fan of mushrooms like I am, and you have the time, substitute the canned mushrooms for 2 pounds of fresh mushrooms.
- I love my CrockPot but you can use any slow cooker.
