You will want to try these fluffy apple cider fall cupcakes with creamy vanilla cinnamon buttercream frosting. You will love baking with the kids and making these super easy fall cupcakes. Cute sprinkles with sugar leaves give the cupcakes the look of fall and are perfect for Thanksgiving.

I have always loved to bake cupcakes with my kids that reflect the holiday. Thanksgiving is no exception. But if you are like I am you do not have the time to make a cupcake batter from scratch. That is why this recipe starts with a simple yellow cake mix. Start with a simple box of Cake Mix and an easy Cinnamon Butter Cream frosting.

I added 2 cups of apple cider reduced down to 1 cup to substitute for the water. However, you can just make the recipe per the directions on the box which makes the recipe super simple.

The apple cider does give the cupcakes a hint of fall and the cinnamon frosting is so pretty with the sprinkles. The cinnamon buttercream also is a taste surprise when you take the first bite. I have not tried this yet but the cinnamon buttercream would be perfect if you have on hand a spice box cake mix.

Apple Cider Fall Cupcakes

You will want to try these fluffy apple cider fall cupcakes with creamy vanilla cinnamon buttercream frosting. You will love baking with the kids and making these super easy fall cupcakes. Cute sprinkles with sugar leaves give the cupcakes the look of fall and are perfect for Thanksgiving.

Ingredients

For the Cupcakes:

  • 1 box of Dunkin Hines Classic Yellow cake mixFor the Cupcakes:
  • 2 cups of apple cider (reduced to 1 cup for the recipe)
  • 3 large eggs
  • 1/3 cup of light olive oil (or you can use the recommended vegetable oil)

For the Frosting:

  • 1 cup of butter (2 sticks)
  • 4 to 6 cups of powdered sugar
  • 1 to 2 tablespoons of milk
  • 1 teaspoon cinnamon
  • Food coloring if desired
  • Fall Sprinkles

Instructions

  1. Before making the cupcakes (even the day before) place the 2 cups of apple cider in a small saucepan and bring to a gentle boil, reduce the heat and simmer until the apple cider measure 1 cup. Cool completely.
  2. Preheat the oven to 350° F.
  3. When the cider is cool mix together in a stand mixer or large bowl with a hand mixer the eggs, oil, apple cider, and the cake mix. Mix on low speed for 30 seconds and then mix on medium speed for 2 minutes.
  4. Line a cupcake baking pan with cupcake liners. Use a light brush of butter in the bottom and sides of the liners so the cupcake removes from the liner easily.
  5. Fill the cupcake liners 3/4 full.
  6. Bake for 15 to 18 minutes. Check at the 10-minute mark with a clean toothpick.

To Make the Frosting:

  • Have your butter room temperature to start. Mix until smooth and fluffy the butter.
  • Add the vanilla and the milk one tablespoon at a time to get the consistency you would like. Add food coloring.
  • Add the powdered sugar 1/2 cup at a time to get a thick consistency that will stand up but not too thick.
  • Transfer the frosting to a piping bag with a decorative tip.
  • Decorate the cupcake and add sprinkles.
