This healthy vegan rosemary white bean soup is a smooth, filling, and hearty plant-based meal.  An easy Tuscan Italian-style bean soup without any oil or kale.  The creaminess comes from blending one can of cannellini beans before they are cooked this makes the recipe also dairy-free.

A fast and easy Italian-style white bean soup that is super easy to make. The soup is creamy, filling, and saves and freezes well. When you serve white bean soup with hearty whole wheat bread you have a meal. Perfect for lunch or a fast weeknight dinner.

Equipment Needed

  • A large soup pot
  • A Blender or Food Processor
  • Water Saute Onions

Tips for Making Vegan White Bean Soup

  1. I like to use cannelloni Beans but you can also use butter beans or northern beans.
  2. Using canned beans makes cooking quick and easy.
  3. To water saute the onions add about a 1/4 of inch of water into your pot and add the chopped onions. Make sure not to leave the pan but stir all the while they are cooking. If the pan gets too dry add more water until the onions are translucent.
  4. Make sure to blend or in a food processer puree one of the cans of white beans in their liquid. This makes the soup creamy and delicious.

How to Make Creamy Vegan White Bean Soup

  • Start by chop the onions and the garlic.
  • Take one can of white beans and puree in a food processer or blender until very smooth.
  • Add water to your soup pot and saute the onions and garlic.
  • When the onions are translucent add the broth, two other cans of beans, and spices.
  • Bring the soup to a boil and then simmer for 25 minutes are low.

Description

This healthy vegan rosemary and thyme white bean soup is a smooth, filling, and hearty plant based meal.ย  An easy Tuscan Italian style bean soup without any oil or kale.ย  The creaminess comes from blending one can of cannellini beans before they are cooked.ย 


Ingredients

Scale
  • 1 medium onion chopped
  • 4 cloves of garlic crushed
  • 1/2 cup of water
  • 3 cans of cannellini beans
  • 3 cups of vegetable broth
  • 1/2 teaspoon of fresh chopped rosemary (or 1/4 teaspoon crushed rosemary)
  • 1/8 teaspoon dried thyme
  • pepper and crushed red pepper to taste

Instructions

  1. Chop the onion into uniform small size pieces, press 4 cloves of garlic, and set aside.ย 
  2. In a blender or food processer, blend until smooth 1 can of cannellini bean and the juice from the can.ย 
  3. In a large soup pot add 1/2 cup of water the onion and the garlic and saute until translucent. Make sure not to leave but stir constantly so the onions do not burn. If before the onions are cooked the pan becomes dry add a little more water. (This process is called water sauteing)
  4. Next add the broth, 2 drained cans of beans, rosemary, thyme, pepper, and crushed red peppers. Stir well.ย 
  5. Bring the soup to a boil and then reduce the heat to low and simmer for 10 to 15 minutes until all the beans are heated through.ย 
  6. Serve with a loaf of good whole wheat bread or croutons.ย
