How to Baked Acorn Squash with Butter and Brown Sugar

Acorn squash is a classic winter squash. It’s easy to prepareβ€”just cut in half, remove the seeds, and bake until tender. How to Cut an Acorn Squash

Be very careful cutting the squash in half. I like to set the squash on a towel on the counter after I removed the stem with the tip of the knife. I then put a pot holder in my hand that is not holding the knife and cut through the squash.Β 

If your knife gets stuck you can take the squash with the knife in it and bang it on the floor. Just put the towel on the floor and use gravity to cut through the squash.

You can also put the squash in the microwave for one minute to try to soften the skin before cutting.

How to Prepare the Acorn Squash for Baking

In order to prepare the acorn squash for backing or roasting in the oven the seed much be removed from the center. Before you start make sure to wash off the outside of each acorn squash as sometimes from the store there will be dirt on the outside. The best way to do this is to cut the squash in half and scoop out the seeds with a spoon.

Prepare a baking pay by spraying it with spray oil. I like to use a pan that fits the squash halves snuggly. I want to make sure that the halves do not roll around to tip over and spill out all that sweet buttery goodness.

How Many Calories in Baked Acorn Squash

Half of an average acorn squash is about 84 calories. This is if your half is about 1 and a half cups. You may like your acorn squash just baked naked which is delicious just on its own. You can add to this after baking some salt and pepper and you have a fabulous side dish.

Our family and Jim’s family (my husband) grew up on baked acorn squash that had more of a sweetness to it. Our mothers added butter and brown sugar to the middle of each half. When you make my recipe the calories increase to 220 calories, but the taste is well worth the extra calories.

Ingredients

Scale
  • 2 acorn squash
  • 4 tablespoons of butter
  • 4 tablespoons of brown sugar
  • spray oil to coat the pan


Instructions

  1. Preheat the oven to 400Β°F
  2. With a sharp knife and each acorn squash stable on a towel on the counter, cut each squash in half. (see notes)
  3. Scoop out the seeds from each half of each acorn squash.
  4. Spray a baking pan with spray oil and set each half in the pan.
  5. Add 1 tablespoon of butter and 1 tablespoon of brown sugar to each of the 4 halves.
  6. Bake the acorn squash uncovered for 1 hour and 15 minutes or until when you insert a fork it is tender.
