Ingredients You’ll Need

  • 1 container Light and Fit caramel apple pie Greek yogurt, this brings the flavor and creaminess
  • 2 tablespoons vanilla protein powder (about 1/8 cup or 1 single serving package), I use Clean Simple Eats vanilla
  • 1 teaspoon monk fruit sweetener, for a touch of sweetness with no sugar
  • 1/8 teaspoon xanthan gum, this helps keep the texture smooth and scoopable
  • 1 and 1/2 cups vanilla Fairlife milk, for a creamy protein-rich base
  • A pinch of salt, to round out all the flavors

How to Make Ninja Creami Caramel Apple Pie Protein Ice Cream

  1. Step 1: Mix your base. Pour the Fairlife milk into your Ninja Creami pint container, then add the caramel apple pie yogurt. Add the protein powder, monk fruit, xanthan gum, and a pinch of salt. Whisk everything together right in the pint until the protein powder is fully dissolved.
Pro tip: If you see lumps, use a small hand blender or shake it well. Lumps in the mix can affect the final texture after freezing.
  2. Step 2: Check your fill line. Make sure your mixture does not go above the max fill line on the pint. Give it a gentle stir one more time to make sure everything is well combined.
  3. Step 3: Freeze overnight. Put the lid on your pint and place it in the freezer. You need it to freeze for a full 24 hours. I always make mine the night before I want to serve it.
Pro tip: Make sure the top of your mixture is flat and level before freezing. If it has a mound in the center, use the back of a spoon to smooth it out. The Ninja Creami processes better with a level surface.
  4. Step 4: Process on the Lite Ice Cream setting. Take your pint out of the freezer and let it sit on the counter for 5 minutes. Then run the outside of the pint under warm water for 60 seconds. Place it in your Ninja Creami, lock it in, and run it on the Lite Ice Cream setting.
  5. Step 5: Re-spin if needed. Once it finishes, check the texture. If it is not quite smooth enough, run it through the Re-spin cycle. That usually does the trick and gives you that perfect creamy texture.

Variations

  • Stir in a spoonful of diced sauteed apples after processing for real apple pie bites
  • Add a swirl of sugar-free caramel sauce on top before serving
  • Sprinkle in a pinch of cinnamon or apple pie spice for a warmer flavor
  • Crumble a graham cracker or two on top for that pie crust feel
  • Swap the vanilla protein powder for a caramel or cinnamon flavor
  • Add a small handful of chopped pecans for a little crunch

Frequently Asked Questions

Q: Can I use a different brand of protein powder?

A: Yes, you can. Any vanilla or caramel protein powder works here. Just know that different brands can change the sweetness and texture a little, so you may need an extra re-spin.

Q: Why does my Ninja Creami come out powdery or crumbly?

A: This is normal on the first spin. Just run it through the Re-spin cycle once or twice. The powdery look means it needs a little more processing to turn creamy.

Q: What Ninja Creami setting do I use for protein ice cream?

A: Use the Lite Ice Cream setting. It works best for lower fat, protein-based mixes like this one. Then re-spin if you need to.

Q: What does the xanthan gum do in this recipe?

A: The xanthan gum helps keep the ice cream smooth and scoopable instead of icy. It is a tiny amount, but it makes a real difference in the final texture.
