Mini Pineapple Upside Down Cupcake Pan
One day when I was at Home Goods I found this super cute mini Pineapple Upside Down Cupcake pan. We were having a spring party with friends at our house and I knew that Pineapple Upside Down Cupcakes were going to be our dessert.

For our friends, it worked out perfectly. Everyone felt special with their beautiful yellow and red cupcake on their plate. Do not forget the whipped cream or whipped topping.
How to Make Pineapple Upside Down Cupcakes
There are three basic steps for making Pineapple Upside Down Cupcakes from scratch recipe.
The first step is to make the batter, the second step is to melt the brown sugar and butter in a small pan and the third step is to put it all together.
The Cupcake Cake Batter
- Cream together 1/3 cup of butter at room temperature and 1 cup of white sugar on medium speed with a hand or stand mixer.
- Add 2 eggs and 1 teaspoon of vanilla and mix until creamy.
- Sift or whisk together 1 & 3/4 cups of flour, 2 teaspoons of baking powder, and 1/4 teaspoon of salt.
- Now add the dry ingredients and the wet ingredients alternately to the butter, sugar, and egg bowl. You will have a smooth creamy cake batter.
- Fill each cupcake space with batter to about two-thirds full.
- Bake at 350Β° for 20 to 25 minutes, or until the top is golden brown and the toothpick comes up clean.
Brown Sugar Topping classic Pineapple Rings and Maraschino Cherries.
- On the stove melt 1 cup of brown sugar and 2 tablespoons of butter
- In the pineapple upside-down pan stray with spray oil.
- Divide the brown sugar butter mixture evenly between each of the 6 cupcake spaces.
- Drain a can of pineapple rings. Add one pineapple ring to each cupcake space.
- Drain off 6 maraschino cherries. Add one cherry to the center of each pineapple ring.
Final Assembly – Putting It All Together
- Fill each cupcake space with batter to about two-thirds full.
- Bake at 350Β° for 20 to 25 minutes, or until the top is golden brown and the toothpick comes up clean.
