Easy S’mores Cupcakes

Summer is a time for playing outside, campfires & S’mores. But depending on the weather sometimes S’mores can be cupcakes. I am a S’mores fanatic, I love all things that are S’mores flavor, but where we live you can not always have a campfire. I have been looking for a cupcake recipe but all the over the top beautiful ones are so complicated. Here is a simple recipe even the kids can help with.

Easy S'mores Cupcakes

If you are like I am and love all things S’mores, you will love how simple these cupcakes are to make. So easy you can get the kids involved.  I used another of my favorite, Marshmallow Fluff as the frosting, but it did not hold up well once I took the torch to them. You can just leave them without making the just toasted look or what I would suggest just eat them all day you make them 😇.

How to Make Easy S’mores Cupcakes

  • Start by making a graham cracker base, very quick and press into cupcake liners.
  • Next whip up a box mix chocolate cake mix.
  • Pour the cake batter over the graham cracker base 3/4 of the way to the top.  Bake per the directions on the box mix.
  • Now for the frosting.  If you are in a hurry you can use the marshmallow fluff I used as long as you are going to eat them right away.
  • If you want to go all out and make a Marshmallow Frosting that will hold up I have the recipe I used in my second try for these delicious cupcakes.

Box Cake Mix & a Hospitality Mindset

There is no shame in making a box mix.  🎂 There are so many recipes, that have wonderful from scratch chocolate cake, but a busy mom does not have the time.  For a special occasion or for teaching your school-age kids how to cook, yes.  But for everyday Box mix is just fine.  When you are shopping and see cake mix on sale stock up so you can always have a mix on hand.  They are so simple and just making a cake in a 13 x 9 baking pan can make a regular night dinner a party.  

When I got married and was talking to my Aunt (who was like a grandmother to me)  and I was telling her I just did not know how to have friends over for a party get together, Aunt Lois said, “If you have a box cake mix and a pot of coffee, you have a party!” I have tried to always keep this mindset we having we want to have friends over, that it is the company and friendship that is what is most important.

I love all the recipes for S’mores Cupcakes, but with little ones who has the time for from scratch. This recipe is quick & easy with two types of frosting.  I used my favorite marshmallow fluff, delicious and looked great but did not hold up.   • Total Time: 39 minutes
  • Yield: 24 cupcakes 1x

Ingredients

Units Scale
  • 1 Box Cake Mix Duncan Hines Devil’s Food
  • 1 cup Water
  • 1/3 cup Vegetable Oil
  • 3 Large Eggs
  • 9 whole Graham Cracker Crushed
  • 1 stick of Butter, melted
  • 1/2 cup of Flour
  • 1/4 cup Brown Sugar
  • 1 Jar of Marshmallow Fluff (or this perfect Marshmallow Frosting from Baking a Moment)

Instructions

  1. Preheat the oven to 350˚
  2. Prepare the Cake Mix according to the Box instructions.
  3. Mix the Water, Vegetable Oil eggs & Cake mix for 30 seconds on slow & 2 minutes on Medium.
  4. Crush the graham crackers in a plastic bag with a glass cup or rolling pin.
  5. Mix crushed cracker with the melted butter, flour & brown sugar.
  6. Line a cupcake pan with cupcake liners.
  7. Press about 2 tablespoons of graham cracker mixture in the bottom of each cup.
  8. Fill each cup 3/4 full of cake mix batter.
  9. Bake at 350˚ for 19 minutes.
  10. When cool frost with Marshmellow fluff and eat right away, or make the easy frosting if you are not going to eat right away.

Easy S’Mores Marshmallow Frosting

Thank you to “Baking a Moment” for the perfect stiff frosting that holds up the warm temperatures.

Marshmallow frosting original recipe found at Baking a moment 

  • Total Time: 40 minutes

Ingredients

Units Scale
  • 5 egg whites, large or 6 medium
  • 1/2 teaspoon cream of tartar
  • pinch of salt
  • 2 cups of sugar
  • 2 teaspoons vanilla
  • 2/3 cup water

Instructions

  1. Divide your eggs making sure there is not any yoke in the egg whites.
  2. In your stand mixer, mix together the egg whites, cream of tartar and the salt. Mix on medium speed until foamy. 
  3. While the mixer is still on medium speed add one cup of sugar very slowly in a steady stream. 
  4. When the sugar is added, whip on high until stiff peaks form. 
  5. Add the vanilla and continue to mix at low speed while you prepare the next step. 
  6. In a medium pot on the stove, combine 1 cup of sugar, water  and heat over medium heat until the mixture reaches 235 degrees F. Use a candy thermometer for an accurate measurement of the temperature. 
  7. With the stand mixture on a very slow speed, slowly add the water sugar mixture to the egg whites. 
  8. After you have all the sugar water mixture added to the egg whites in the stand mixer, turn the mixer on to high and whip the frosting until it is stiff and glossy white.
