Fun Halloween Rice Krispie Treats with Marshmallow Frosting

Make a fun Halloween twist on a traditional Rice Krispie squares. Add a fluffy homemade marshmallow top decorated with all your favorite shapes of Autumn candy corn. Both the Rice Krispie treats and the marshmallow frosting are so easy to make. Get all the kids involved in a fun kitchen Halloween activity.
If you need a Halloween snack for your fall party, or just want a sweet treat for the kiddos on Halloween night, you will love how easy the marshmallow top rice crispy squares are to make. Super simple easy to make. The topping is the wow factor with a layer of fluffy homemade marshmallow and fun shaped candy corn. You can make them with or without the candy corn but having the harvest mix candy corn gives them a super fun presentation.

How to make Halloween Rice Krispie Treats with Homemade Marshmallow
- Line a 13×9 Glass Baking Pan, with deep sides, with parchment paper that is buttered well. If you skip this set it will be terribly difficult to get the treats out of the pan, and off the paper when you cut them. (trust me on this one as I forgot on one of my batches)

- Melt one 10 oz bag of marshmallows in a large saucepan on the stove with 3 tablespoons of butter. Do not walk away and stir as the marshmallows melt.
- When the marshmallows are melted quickly add 6 cups of Rice Krispies and stir.
- Quickly transfer the mixture to the prepared pan.
- Take a buttered spatula or your hands that are well-buttered and flatten out the Rice Krispies mixture in the pan.
- Set this aside.
- Next, make homemade marshmallows for the topping. Follow the recipe in my post How To Make Homemade Heart Shaped Marshmallows.
- The only change from this recipe is to leave out the food coloring.
- You will also want to only whip the mixture in your mixture for 7 to 8 minutes at the most. You want to be able to spread the marshmallows for this recipe. At 6 minutes start testing so they do not become too stiff.

- Spread the marshmallows over the top of the Rice Krispy Squares.

- Decorate the top with candy corn.

- Allow to set up in the refrigerator for at least 30 minutes.
- Remove the treats from the pan by lifting up on the parchment paper.
- Cut into squares or any shape you like.

Ingredients
- 1 package of 10 oz marshmallows
- 3 tablespoons of butter
- 6 cups of Rice Krispies
Homemade Marshmallows
- 3 (1/4 oz) packet of Knox Unflavored Gelatin
- 3/4 cup of cold water (1/2 cup of water for the gelatin, & 1/4 cup water to be heated with the sugar)
- 2 cups granulated sugar
- 2/3 cup light corn syrup
- 1/4 tsp salt
- 2 tsp vanilla extract
For Your Pan:
- Butter or spray oil
Instructions
- Line a high sided 13 x 9 baking dish with parchment paper, leave about 2 to 3 inches over the edge. Butter or spray with spray oil on the parchment. This allows you to be able to lift out the treats and cut them so they can be removed form the parchment paper
Rice Krispie Treats:
- Melt the 3 table spoons of butter in a large sauce pan on the stove.
- Add the bag of marshmallows and stir until melted.
- When melted add the Rice Krispies to the pot and stir to coat all of the cereal.
- With a spatula spread the Rice Krispie treats in the prepared pan, set aside.
Homemade Marshmallows:
- First, combine 1/2 cup of cold water & 3 packets of Knox Unflavored Gelatin in the bowl of the stand mixer. Let sit for 10 minutes.
- Next, in a saucepan mix together 2 cups of sugar, 2/3 cup of light corn syrup and 1/4 cup of water. Stir together. Over medium heat bring to a boil, stirring occasionally. When at a boil, boil rapidly for 1 minute. Turn off and let cool for 2 minutes.
- When the 10 minutes timer is over for the gelatin & water, turn on the mixer on low to break up the gelatin.
- With the mixer on low slowly and carefully take the cooled sugar mixture and pour into the mixing bowl.
- Add the 1/4 tsp of salt to the mixing bowl.
- Increase the speed of the mixture to high and mix for 6-8 minutes. (watch mixture to make sure it does not become too stiff your you will not be able to spread the marshmallows in your pan on top of the Rice Krispie treats.
- When the right spreadable consistency, slowly add the vanilla.
- Spread the Marshmallows over the rice Krispie treats.
- All the bars to cool, about 30 minutes
- When cool and the marshmallow is set remove by lifting the parchment paper out of the pan.
- You can decorate with Candy Corn before or after it cools.
- Cut into squares or any shape you like.
