Ingredients You’ll Need
- 1/2 onion, chopped
- 2 pounds ground beef
- 3 tablespoons taco seasoning, or one packet
- 2 cans diced tomatoes with green chilis, drained if too watery
- 1 can black beans, drained and rinsed
- 1 cup frozen corn
- 1 cup salsa
- 2 to 3 cups shredded cheddar cheese
- Soft or hard taco shells, for serving
- Optional toppings: shredded lettuce, sliced avocado, taco chips, sour cream, extra salsa
Ingredient Notes and Substitutions
- Ground beef: Ground turkey or ground chicken work great here if you want something lighter. This is one of those ground beef recipes for dinner that is very easy to adapt.
- Taco seasoning: One store-bought packet is perfect. You can also mix your own with chili powder, cumin, garlic powder, and onion powder.
- Tomatoes with green chilis: Ro-Tel is my go-to. Drain them first if the can looks very liquid.
- Black beans: Pinto beans are a great swap if that is what you have on hand.
- Salsa: Use whatever jar your family likes, mild, medium, or hot.
- Cheese: A shredded Mexican blend works just as well as cheddar. Freshly shredded cheese melts much better than the bagged kind, so if you have a few extra minutes, it is worth it.

How to Make Easy Taco Skillet Dinner

Tip: Do not skip this step. Cooking the onion first builds a better flavor base for the whole skillet. - Brown the ground beef and season it. Add the ground beef and cook until no pink remains, breaking it apart as you go. Drain the excess fat, then stir in the taco seasoning.
Tip: Drain the fat well so your skillet does not get greasy. - Add everything else. Stir in the drained tomatoes with green chilis, salsa, black beans, and frozen corn. Give everything a good stir to combine.
- Simmer for 15 minutes. Reduce the heat to medium-low. If the skillet looks watery, leave the lid off so the extra liquid can cook off.
Tip: Taste at the end of this step and adjust salt or seasoning if needed. - Load it up with cheese. Sprinkle the shredded cheddar evenly over the top. Put the lid on for 2 to 3 minutes and let the cheese get melted and bubbly.
- Serve your way. Spoon into taco shells, pile over chips, or ladle onto shredded lettuce for a taco bowl. Set out whatever toppings your family loves and let everyone go.

Variations
- Taco rice skillet: Stir in 1 cup of cooked rice after simmering and before adding the cheese. This turns it into a hearty taco rice dinner that stretches easily to feed a bigger group. Taco rice is one of our family’s favorite ways to eat it.
- Ground turkey version: Swap the ground beef for ground turkey for a lighter skillet dinner with the same great taco flavor.
- Add heat: Use hot salsa or stir in a pinch of cayenne if your family likes things spicier.
- Low carb taco bowl: Skip the shells and chips and serve straight over shredded lettuce. It is a simple and filling low carb dinner.
- Add veggies: Diced zucchini, bell pepper, or sweet potato are all great additions. Toss them in with the onion at the beginning and they will be perfectly tender by the time the skillet is done.
Storing and Reheating Leftovers
- Store the skillet filling in an airtight container in the fridge for up to 4 days. The flavor gets even better overnight.
- To reheat, warm it on the stovetop over medium-low heat and add a small splash of water if it looks dry. Add fresh cheese on top, let it melt, and serve.
- You can also freeze the beef filling for up to 3 months. Thaw it overnight in the fridge and reheat on the stovetop. Add fresh cheese when you are ready to serve.
