8 Minute Instant Pot Baby Potatoes in Butter and Parsley

Making 8 minute Instant Pot baby potatoes with butter & parsley has been a favorite at the family table for years. Popular in the 50s and 60s, now you can make a fork tender fully parsley potato hands off in the instant pot. It is one of the simplest potato recipes, quick & easy that will be a crowd pleaser with for any main dish. After cooking simply toss in butter and finely chopped parsley and serve.

Baby potatoes are so simple to make in the Instant Pot, just 8 minutes under pressure. They are fork tender, you can cut them in half or just separate them into bite-size with a fork. toss them with butter and minced parsley and you have a quick & easy side dish that your family will ask for each week. How To Make 8 Minute Instant Pot Baby Potatoes

You can not get a quick side dish when you are making a family dinner. You can use the wire rack that came with your Instant Pot, but removal is so much easier with the Instant Pot accessory basket that you can get budget-friendly by going here.  

After you wash off the potatoes and make sure to remove any discolored spots, just add 1 cup of water to the inner pot. You can leave the potatoes whole at this point as you add them to the basket or you can cut them in half. I usually leave them whole and take my fork when they are done and separate them in half.

Place the lid on, set the top valve to Seal, and set for high pressure for 8 minutes.  As you know it may take 5 minutes to get to pressure for the time to start counting down.

Allow for a natural release of 10 minutes and release any remaining pressure and open the lid. With pot holders remove the basket. Transfer the potatoes to your favorite bowl. Add the butter and parsley and toss.  Done!  While the potatoes are in the Instant Pot you can be grilling outside burgers or chicken. Or you can make the potatoes first, put them in an oven-safe bowl and keep them warm while you make your main dish in the Instant Pot.

Variation for Instant Pot Pressure Cooker Baby Potatoes

Here are some additional simple variations you can make for a quick side dish with baby potatoes.

  • You can use larger white potatoes cut in quarters.
  • All red skin baby or multi-colored baby potatoes.
  • Butter and smashed garlic.
  • Butter and parmesan cheese
  • Dill and butter.
  • Thyme and butter
  • Olive Oil and Basil.

Ingredients

Units Scale
  • 10 to 12 baby red skin potatoes
  • 1 cup of water
  • 2 tablespoons butter
  • 1/4 cup chopped parsley


Instructions

  1. Wash the potatoes.
  2. add the water to the inner pot of the Instant Pot
  3. Place the potatoes in the basket on top of the trivet accessory.
  4. Put on the lid, set to Seal.
  5. Set to high pressure for 8 minutes.
  6. Allow for a 10 minutes natural release.
  7. Carefully remove the basket with potholders and transfer the potatoes to a glass bowl.
  8. Add the butter & parsley and toss.

  1. The 50s and 60s, yup. That’s when I began cooking in earnest and these potatoes have always been a favorite. BUT, I’m ‘going nuts’ trying to remember what they were called back then; it was a man’s name attached to the recipe, such as Bananas Oscar but obviously not that one :-). Does anyone remember that name? I hope. Thanks for publishing for the benefit of folks who’ve not been introduced to this super- easy -and tasty dish.
