Inspiration for Corned Beef Reuben Irish Nachos

Jim and I were with our dear friends who ordered in the pub and were visiting. The pub had on the menu Irish Nachos. Our friends being Irish loved the idea and ordered the appetizer. Let’s just say it was … horrible tasting. The ingredients were not healthy or fresh. But we all loved the idea. So I set out to make a healthy version with fresh ingredients for our next monthly card party.

The corned beef Reuben Irish nachos were the appetizer the night I hosted our friend’s potluck and card party and they were a success. So much so that I will be bringing them again when our Irish friends host the March get-together.

All it took was homemade oven baked potato rounds instead of processed waffle fires, lots of delicious Souer kraut instead of just a spoonful, a simple homemade Swiss cheese sauce instead of a slice of deli Swiss cheese, and a light thousand Island Dressing drizzled on top.

I continued the Irish theme by making the Swiss cheese sauce with a light Irish beer. (recipe below)
