Super Simple Salsa Recipe

In the summer we love to have people over and a Super Simple Summer Salsa is an easy appetizer to have at the ready. Whether you’re having neighbors, neighborhood kids, or graduation parties, Fourth of July parties, or just an evening out on the deck a super simple summer salsa is always a hit.

With our salsa, we’ve traditionally used taco chips, but with the popularity of healthier chips, we have found there are lots of options that satisfy everybody’s taste.

Super Simple Salsa Recipe

The Super Simple Summer Salsa recipe neighbors and friends have asked me to copy for them as it is refreshingly healthy and reminds everyone’s favorite of a lazy summer afternoon. I started making this salsa when the tomatoes from our garden were abundant and have continued making it for holiday parties and family get-togethers.

When our girls were in elementary school before their brother was born the two neighbor boys twins used to come over and play video games on my husband’s PlayStation. He used to have many a summer evening together laughing and playing and eating salsa along with an old favorite that I don’t make anymore which is the cheesy dip with Velveeta cheese.

Now that we are more health-conscious I wouldn’t dream of making this old recipe. I think I’ll work on making a healthy or low-fat version for the summer.

Description

Vegetable fresh from our garden make this salsa taste like summer when all the tomatoes are in full ripeness. All the ingredients are also found in your local farm market or store.


Ingredients

Units Scale
  • 1 cup dices Tomatoes
  • 3/4 cup diced Onion
  • 1/3 cup fresh Lime Juice
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 small diced Jalapeño Pepper
  • 2 TLB Fresh Parsley chopped
  • 1 TLB Fresh Chive chopped
  • 1 Avocado large dice
  • 2 TLB Olive Oil or to taste


Instructions

  1. Chop and dice all of the ingredients, lightly mix.
  2. Serve with chips.
