My family members have not cooked many Indian recipes. And we have not made many recipes using curry or lentils. We are now trying to eat at least 3 times a week vegetarian and lentils are a good source of vegetarian protein. Lentils are easy to make so I have dived into all the delicious Indian recipe spices that you can use with lentils and curry.

While a lot of lentil dishes use green lentils or brown lentils the red lentils are quicker to cook and have a milder flavor. Green lentils and brown lentils take a long time to cook compared to the red and orange lentil varieties.

Check out your local grocery stores in the bean section for a variety of lentils fresh spices and ground spices.

If you are looking up Indian cuisine this type of delicious recipe is often called red lentil dal or Indian Red lentil Dahl. A dahl is a simple Indian recipe that is common in every Indian home.

Other than the lentils the simple ingredients include these Indian spices; garlic, fresh ginger, turmeric, chili powder, curry powder, and crushed tomatoes. As the recipe is cooked in a gentle simmer you add lemon juice and full-fat coconut milk. In our recipe, I did substitute light coconut milk.

  • Water
  • Minced Garlic
  • Minced Fresh Ginger
  • Ground Turmeric
  • A Jalapeno (seeds and spines removed
  • Chili Powder
  • Curry Powder
  • Garam masala
  • Red Split Lentils
  • Vegetable Broth
  • Light Coconut Milk (in a can)
  • Almond Butter
  • Lemon Juice

How to Make Vegan Red Lentil Curry

  1. Rinse lentils in cold water for about 5 minutes.
  2. Heat a large skillet to medium-high heat. Add the garlic, ginger, and H pepper and water saute with cold water for 2 minutes. Watch and stir the whole time so that it does not burn.
  3. Lower the heat and add the ground turmeric, chili powder, curry powder, garam masala and stir just to warm the spices.
  4. Add the lentils, vegetable broth, and tomatoes and stir and bring to a boil.
  5. Cover and reduce to a simmer and cook for 10 to 15 minutes or until the lentils are starting to get soft.
  6. Add the coconut milk, almond butter, and uncovered on low to thicken.
  7. When the lentils are to the thickness you like remove from the heat and add the lemon juice.

Ingredients

  • 2 tablespoon water
  • 2 teaspoons of pre-minced garlic
  • 2 inches of fresh ginger, minced
  • 1 teaspoon ground turmeric
  • 1 jalapeno pepper seeds and spines removed and chopped
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon curry powder
  • 1 teaspoon garam masala
  • 1 1/2 red split lentils
  • 2 cups of vegetable broth
  • 1 can of crushed tomatoes (14 oz)
  • 1/4 cup of light coconut milk (from a can of coconut milk, or add a whole can of full-fat coconut milk, but to keep the recipe heart healthy I only used 1/4 cup of light coconut milk. )
  • 2 tablespoons of almond butter
  • 1 tablespoon of lemon juice

Instructions
