Quick and Easy Almond Flour Waffles

Almond Flour Waffles are crispy on the outside light fluffy inside with a deliciously rich flavor. Gluten free and if you substitute oat or almond milk they are dairy free too. Add berries and/or maple syrup and the kids will never know that they are good for them.

If you are looking to reduce sugars I have swapped out the 2 tablespoons of sugar for 2 tablespoons of Truvia. Packed with protein and nutrient-dense perfect for picky eaters. A perfect treat for low carb and keto eaters, just substitute the pure maple syrup.

A sweet and savory breakfast, lunch, or kid friendly dinner. As you know as busy moms we do not always have time to make meals that have the 3 basic food groups, protein, veggie, and whole carbs. But making these healthy waffles can put you at ease as you are getting protein and healthy flour, and just make sure to add the fruit on top and it is almost like dessert.

How to Make Almond Flour Waffles

Waffles are one of the simpler meals you will make. Add all the ingredients to a mixing bowl, mix together, heat up your waffle maker and in 4 minutes you can be serving up a filling meal.

You may or may not know that our family are Disney fans. So of course I have a mickey shaped waffle maker. But I have found that while this waffle maker is fun on vacation when the kids were little and they would only want one large Mickey face waffle. Now with adults in the house, I can not make them fast enough.

Now I have my favorite waffle maker that has removable waffle plates that go in the dishwasher. And the new waffle maker makes 4 at a time. If you need a waffle maker I can not recommend this one enough.

Keto and or Paleo

To make this recipe Keto or Paleo, substitute the 2 tablespoons of sugar for Truvia or any no sugar sweetener. The waffles are packed with protein and will keep you full.

Almond Flour Waffles

Description

Ingredients

Units Scale
  • 2 cups of almond flour
  • 1 tablespoon cornstarch
  • 2 tablespoons sugar (for sugar-free use 2 tablespoons Truvia)
  • 1 1/2 teaspoon baking soda
  • pinch of salt
  • 4 eggs
  • 2/3 cup milk (for dairy-free 2/3 cup of almond or oat milk)
  • 2 tablespoons of melted butter (for dairy-free use your favorite oil)
  • 2 teaspoon vanilla extract


Instructions

  1. Preheat a nonstick waffler maker. When hot spray with spray olive oil.
  2. Mix in a large bowl the flour, cornstarch, sugar, baking soda, salt.Β 
  3. Make a well in the middle of this mixture and add the eggs, milk, melted butter, and vanilla.
  4. Mix well but do not overmix
  5. When the waffle maker is ready, spray with spray olive and add 1/4 to 1/2 cup of batter to each waffle section.Β 
  6. Close the lid and let bake for 4 minutes. Check the waffles and if you need another minute close and cook one minute more.

Notes

  • Some waffle makers have an internal timer. Just check the waffles 4 minutes to make sure they are not overcooked or burned.Β
