How to Make Buffalo Chicken Dip (easy steps for one small skillet)

  1. Cook or buy shredded chicken. For two small cast iron skillets, I cooked 3 breasts of chicken in one cut of vegetable broth for 4 hours on low and shredded by hand with two forks.
  2. Let the chicken cool.
  3. For one skillet, start by using a hand mixer and mix the 8 oz of softened cream cheese, 1/2 cup of buffalo sauce, and one tablespoon of dry ranch seasoning until smooth.
  4. Next, add 2 cups of shredded chicken, 1 cup of shredded cheddar cheese, and 1/4 cup of blue cheese, and mix well by hand to coat all of the chicken.
  5. Add a small amount of spray olive oil to the bottom of the skillet, and add the dip mixture.
  6. If making 2 skillets for a party, repeat this process for the second skillet.
  7. Top the dip with more blue cheese crumbles and a few green onions.
  8. Bake at 350° F (176° C) for 25 to 30 minutes until bubbly.
  9. Serve with celery sticks, crackers, or chips.
